A good day, with some much needed good news. My friend Ronman is in town, from San Fran and will be visiting tomorrow afternoon. Yay. My other close friend Kristi aka Star, is moving back to Canada, and will editing a documentary in Toronto during January. I am so thrilled. The three of us spent a year in the town of Bivigliano, Italy in 1993, painting our asses off, hanging our dainties on the rose bushes to dry, and eating and drinking the finest an cheapest red wine and crusty bread.
That evening Klara and Duane came over for dinner, and I have to admit, I made the best tomato sauce ever, for our pizzas. So here's the recipe, thanks to Jamie Oliver:
1 clove garlic, chopped
I small dried red chilli, crumbled
2 tsp dried oregano
three 14oz cans plum tomatoes
i tbsp red wine vinegar
I handful of chopped fresh basil (yummy)
salt and freshly ground black pepper
2-3 tbsp extra-virgin olive oil
Cook the garlic with the olive oil, then add the chilli, oregano and tomatoes. Mix gently, but do not break to release the seeds. Bring to the boil and simmer for 1 hour. Add the vinegar, then stir and chop up the tomatoes in the sauce. Now add the basil, season and add the olive oil.
For the pizzas, I made the thin crust dough, smothered it with the tomato sauce, scattered a handful of basil and then broke up pieces of mozzarella. I seasoned with salt and pepper, and after cooking, drizzled olive oil over both pizzas. Mmmm.
