After a very heated and stressful week, the dust finally settled, and to my relief, the outcome was that I don't have to work over the holidays. Nice. I'm burnt out and really needed the time to rejuvinate. That being said, I woke up at 7am this morning, and in true British fashion, baked mince pies (above), brandy snaps and a Christmas stollen. I can only enjoy cooking, when my life is stress free. Last night we enjoyed a tasty thai stir fry with orzo, and this evening I'm cooking a pork roast with fennel, garlic and white wine, thanks to Jamie Oliver. When I'm busy in the kitchen, I know all is right in my life. The weather outside is perfect. Bitterly icy and cold, I have no excuse but to stay indoors, and rock to the Wiggles Christmas Special (as only parents would understand). I'm happy and I'm not ashamed to admit it.
